History and Territory

The olive tree has very ancient roots in the Chianti Classico area, dating back to the mid-6th century BC. The first official recognition of this territory came with the 1716 edict of Grand Duke Cosimo III de’ Medici, an edict that defined the current boundaries of the Chianti Classico area.

Olive cultivation has always found in the Chianti Classico territory a soil that is both highly suitable and challenging, with particularly cold winters and dry, harsh summers. But it is precisely thanks to this slight hardship that the olive tree gives us its highest expression, producing, only in this region, a product of absolute quality.

Our Extra Virgin Olive Oil DOP Chianti Classico

For our oil, in order to guarantee the highest aromatic and taste yield, we harvest early, before full maturation, usually in the last decade of October. The olives are picked strictly by hand in selected plots to ensure the perfect integrity of the drupes.

The crushing process is carried out within 12 hours of harvesting to preserve the varietal aromas and prevent any kind of organoleptic alteration.

The extraction is done mechanically, using a low-temperature centrifugal decanter. During this phase, no water is added in order to preserve all the water-soluble polyphenols, resulting in a positive qualitative and health-related impact.

Chemical Characteristics

The Chianti Classico DOP Extra Virgin Olive Oil has much stricter and improved standards compared to regular Extra Virgin Olive Oil. Our oil has even better values, here are the parameters for the 2023 harvest:

  • Acidity (expressed as oleic acid): 0.2% (max. 0.5%)

  • Peroxide value: 3.4 (max. 12) (meq of oxygen)

  • Total polyphenols: 504 ppm (min. 150 ppm)

  • Total alpha-tocopherols: 271 ppm (min. 140 ppm)

Vintage 2024 and prizes

Even in a challenging year like 2024, marked by frequent rains and limited yields, our DOP Chianti Classico Olive Oil has managed to stand out for its quality and character.

Quality remains our daily commitment, and we are proud to share some of the recognitions received for the 2024 olive oil campaign.

Our DOP Chianti Classico was awarded the Gemma Prize by Maestrod’olio, an important Academy dedicated to promoting exceptional Italian extra virgin olive oils.

Additionally, we are delighted to have been included in the Slow Food Guide 2025, among the most representative entities in the industry, as well as in the prestigious Selection of DOP and IGP Extra Virgin Olive Oils of Tuscany 2025 promoted by the Region.
