Vinification

After a soft pressing, the vinification takes place in stainless steel with use of indigenous yeasts.
The maceration lasts for three weeks in a controlled temperature vessel, at 25°C max.

At least 24 months in a single 38 hl French oak barrel

Tasting notes and food pairings

The wine shows a bright and deep ruby colour. Rich aromas of ripe cherry, forest fruits, wild roses, dried orange peel and raspberry jam. The nose is still young, and yet it gives advance notice of a great evolution with time. Full- bodied, the sip caresses the palate with an ascending rhythm. The tannins are perfectly weaved and the pleasantly sapid aftertaste conveys to the wine its depth and length. Il Torriano enhances the characteristics of Sangiovese in San Casciano in Val di Pesa, that is the elegance and the balance between the soft and the hard part of the wine.

This Gran Selezione is great with lamb or ground game, or hard cheeses.

Vintages

The vintage recorded a fairly mild winter which favoured a slightly earlier budding and shoot growth. The second part of spring was quite rainy and cool.
The summer was generally hot, fortunately without excessive heat peaks. Furthermore, some rain, such as that of August 4th (28mm), allowed a perfect growth of the bunch.

In September, precisely on the 24th and 25th of the month, more rainfall occurred. Fortunately, it did not compromise the harvest with the development of moulds. On the contrary, the rain guaranteed the completion of ripening especially on the later ripening plots.

In this vintage we produced: Chianti Classico DOCG, Riserva di Chianti Classico DOCG, Chianti Classico Gran Selezione Il Torriano DOCG, Campo all’Albero IGT.

It will be remembered as an excellent vintage for the Chianti Classico, with a fairly harsh winter in the first part of the year and a consequent lengthening of the vegetative cycle of the plant.

February and March were rather dry with no rain. Fortunately the rain was abundant in our area in April and May, so as to balance a summer that was hot, dry and sunny but with sporadic precipitation at the end of July and in the second part of August.

Sunny September days preceded the harvest. Strong temperature changes were recorded which favoured phenolic maturities, guaranteeing an extraordinary polyphenolic potential.

The 2018 vintage was fairly regular. The rain and temperatures in the first part of the winter caused a start of bud break in line with the historical average. In some vineyards budding started slightly earlier than a week.

In spring there were frequent precipitations which guaranteed correct water supplies for the subsequent ripening phases. However, the wet weather combined with the slightly lower spring temperatures also led to a small slowdown on the vegetative phase.

The summer months were generally dry and quite hot, but without prolonged and harmful thermal peaks. The maturation was optimal and benefited from dry winds and sporadic rains at the end of September, needed to end the phenolic maturation of some vineyards.

In this vintage we produced: Chianti Classico DOCG, Riserva di Chianti Classico DOCG, Chianti Classico Gran Selezione Il Torriano DOCG, Campo all’Albero IGT.

A vintage that will be remembered for temperature above the seasonal averages in spring and summer. Also characterised by a rather cold winter that limited harmful insects.

Unfortunately, there was a sudden return of cold in April that partially compromised the quantitative yield of some vineyards. However, the frost spared the best plots, which resulted in certainly lower yields but of a very high quality.

The following ripening period was rather hot and dry and it was finally able to benefit from the rains in September which rebalanced the situation of drought that was beginning to occur in some soils.

Once again, the careful knowledge of the vineyards, the precise agronomic choices such as not to defoliate to limit the insolation of the bunches and finally the selection of the grapes during the harvesting proved to be decisive in a certainly complex vintage.

To safeguard the quality and the style of our wines, we only produced: Riserva di Chianti Classico DOCG, Campo all’Albero IGT.

Autumn and winter were characterised by low rainfall, but still sufficient to guarantee the right water reserves for the plants. The spring of 2016 began with good weather, favouring an early germination of about 13 days before compared to the average of the Montefiridolfi vineyards.

The second half of May and first half of June saw cool temperatures and some precipitation. It followed a rather hot summer, but without heat peaks to compromise the correct ripening conditions. In fact, the vegetative-productive balance remained excellent, favouring the ripening of the grapes.

The latter part of September was a somewhat rainy with day/night temperature variations that were very beneficial for a truly well-balanced vintage.
