the long- awaited return: Vin Santo vintage 2017

After a long rest, our precious sweet wine is finally back.

Vinsanto, takes many years to be ready with a very low yeld, making every drop real counts.

Crafted from 100% Trebbiano, typical tuscan white grapes, took more than eight years of silent maturation.

Vinification and ageing took place inside the “caratelli”, traditional small barrels, slowly achieving its extraordinary soul and complexity.

The story about Vin Santo

In September 2017, we carefully hand-harvested our grapes following a challenging season marked by intense heat and drought. While the weather was harsh, it proved ideal for the drying process, ensuring perfectly healthy fruit free from mold.

The yield was naturally limited, but the quality of the fruit was exceptional. To concentrate the sugars and flavors, we let the grapes dry naturally for over three months in our ‘Vinsantaia’ room. Once ready, the fruit was sealed away in traditional ‘caratelli’ barrels, where indigenous yeasts were left to work their magic for the years to come.

Since the beginning of this project, our winemaker had the privilege of collaborating with the renowned Ettore Falvo, an entrepreneur known for his mastery of Vinsanto.

Now, after more than eight years of patient waiting, this nectar is finally ready to be enjoyed.

Tasting Notes

Amber color, with apricot abd honey reminescent. Velvety and deep in the mouth, recall all the fruit and spicy notes.

 

Perfect to pair with shortcrust pies, Cantuccini biscuits, aged cheese and unconventionaly pairable with tuscan chicken liver patè.
